Her twenty-seat restaurant in Singapore serves one menu a night, written that afternoon.

Kavya Iyer's restaurant has twenty seats, one sitting and no printed menu. She writes it each afternoon after visiting the market at Tekka.

"The menu is whatever the market and my memory agree on," she says.

The food is Palakkad Iyer cooking, the way her grandmother made it, with nothing made lighter for foreign palates. Reservations open on the first of each month and close within the hour.
